Sopas (Filipino Chicken Soup)


Sopasis a Filipino chicken soup dish resembling that of Italian minestrone. In the Philippines, the dish is served mostly during breakfast. However, I like to make this delicious soup dish during cold days in general. It is made in variety of ways, below is my version of sopas. It is simple, easy and delicious! Please try it out sometime and enjoy!



Ingredients:

2 large onions (minced)6 cloves of garlic (minced)4 carrots (peeled & cubed)4 celery stalks (cubed)1 whole chicken (fabricated w. bone)4 cups of water4 cans cream of chicken (Campbell's brand)2 tbsp of fish sauce2 tbsp of olive oil1 tsp of crushed black peppercilantro (optional)



Directions:

In a large pot heat olive oil, add onions and garlic sautee for 2 minutes. Add carrots and celery into pot and cook until aromatic. Add chicken and sautee for 5 minutes. Add crushed black pepper and sautee for another 5 minutes. Add 4 cups of water, stir in cream of chicken and fish sauce to taste. Cover and let it boil. Cook until chicken is tender. Serve and garnish with cilantro.
